Dan Dan Noodles [Super Easy Version]

Dan Dan Noodles may look complicated with lots of ingredients, but they're actually very simple. When you make them at home, you can adjust the spiciness however you like. The rich, flavorful broth is so good, I could drink a whole bowl—delicious!
Tip:
If you don't have Chinese wheat noodles, you can use any other white wheat noodles instead.
Dan Dan Noodles [Super Easy Version]

Mix all the seasonings together and set aside. Cook the noodles according to package instructions, then rinse under cold water and set aside.

Heat oil in a pan. Add the ginger, garlic, and shallots, and stir-fry until fragrant. Add the ground pork and cook for about 3 minutes.

Add the chicken broth and all the seasonings. Stir well and bring to a boil over medium heat, then simmer on low for 8 minutes.

Rinse the cooked noodles under cold water. Place the noodles, chopped peanuts, and pickled mustard greens (if using) in a bowl.

Pour the hot soup over the noodles and top with chopped green onions. Enjoy!
