Cooking Instructions
- 1
Peel one layer of the outer skin from the butterbur sprouts, cut off the browned part at the base, soak in water, wash thoroughly, and drain well.
- 2
Spread the leaves open so the buds inside are visible, then lightly press down from above with a knife to flatten.
- 3
Mix the tempura batter according to the package instructions, coat the entire butterbur sprout, and fry in oil at 355°F (180°C) with the buds facing down for about 1.5 minutes.
- 4
Turn them over and fry until crispy, then drain the oil well to finish!
- 5
With salt, you can enjoy the unique bitterness. If you don't like bitterness, try eating them with miso for a milder taste. Both are delicious, so choose your favorite!

Tempura for future cooks - beginner friendly~ Tempura for future cooks - beginner friendly~
I love cooking! I'm still learning how to make so many new dishes everyday through my job as an assistant to a cooking teacher. It is so hard but I love it. I am bad at details and things that require precision, but I can see myself get better after every attempt. It took a long way to get here though; I started out being the most impatient person in the world and tried to make everything right the first time. So for you who just began on this journey, don't follow my mistake! You will get better day by day, as long as you learn to correct mistakes while not losing your head. With that being said, here's my tried-and-true tempura recipe. This was one of first dishes I learnt when I started, along with complicated omelets and beautifully shaped vegetables cooked in broth.Welcome to my online kitchen!

Gluten-Free Tempura Gluten-Free Tempura
Tempura is a popular Japanese dish that can be found in almost any Japanese restaurant. Various seafood and vegetables are lightly coated in batter and fried until crispy. However, the traditional batter is made of wheat flour which contains gluten. Therefore, if you have a gluten allergy as I do, it’s difficult to enjoy this dish.In this recipe, I will show you step-by-step on how to make gluten-free tempura at home, so you can enjoy the crispy tempura again. Not only is this recipe gluten-free, but it's also vegan because I don't use any egg in the batter.Instruction video: https://youtu.be/Rwy070Ly3kEGluten-free tempura sauce: https://youtu.be/rXIiPgge6FE Julie - Mrs. Lin's Kitchen -
The Secret to Making Tempura Batter The Secret to Making Tempura Batter
This is a delicious tempura batter you can make when you don't have any tempura flour on hand. This is easy and crispy! Apparently, it's also good with some mayonnaise mixed in. The vinegar helps to make it crispy. Vinegar and mayonnaise will not affect the taste. It'd probably be even better if you added some katakuriko! You could also add a little joshinko as well. Broccoli Tempura with Matcha Salt Broccoli Tempura with Matcha Salt
Broccoli floret tempura is not that unusual, but this recipe uses up the whole head. In our family we use matcha salt a lot with tempura, so I added the recipe for that too.Use the broccoli raw! You could whisk in an egg to the batter if you like If you mix the batter for too long it will get gluey, so just mix it up quickly. You can use premade tempura flour instead. The tempura is delicious dipped in tentsuyu, but enjoy the broccoli's natural flavor by sprinkling it with some matcha salt.
