Easy & Delicious Sukiyaki Sauce (Warishita)

No need to buy store-bought sukiyaki sauce! You can easily make as much as you need with ingredients you already have at home—super convenient. This sauce can also be used for other dishes besides sukiyaki.
Background of this recipe:
When I used store-bought sukiyaki sauce, I often ran out in the middle of cooking, or the sauce would get too concentrated and heavy as it simmered. I wasn’t a big fan of sukiyaki until I started making this homemade warishita set—now I really enjoy it!

Ingredients

Serves 4 to 5 servings
  • [Warishita Sauce]
  • 7/8 cupsake (200 ml)
  • 7/8 cupmirin (200 ml)
  • 1 1/2 teaspoonsdashi granules (5 g)
  • 7/8 cupsoy sauce (200 ml)
  • 4 tablespoonssugar
  • [Dashi Broth]
  • 7/8 cupsake (200 ml)
  • 7/8 cupwater (200 ml)
  • 2 (2 inch)(5 cm) pieces kombu (kelp)

Steps

  1. 1

    [Warishita Sauce]
    Add the sake and mirin to a small saucepan. Heat to bring to a boil and cook off the alcohol.

    [Warishita Sauce]
    Add the dashi granules, soy sauce, and sugar to the saucepan. Bring to a gentle boil, then remove from heat. The sauce is ready.

    [Dashi Broth]
    Lightly moisten the kombu with water, then gently wipe it with a tightly wrung-out paper towel.
    Place the sake, water, and kombu in a cup or bowl. Let it sit for at least 30 minutes. The broth is ready.

    [Dashi Broth]
    If the sukiyaki sauce becomes too strong while eating, add some of this dashi broth to the pot to dilute.
