This is a recipe for making a large Japanese-style pancake (Obanyaki) using a hot sandwich maker. Perfect for those who want a big serving.

In a bowl, whisk together the all-purpose flour, rice flour, sugar, and baking powder until there are no lumps.

Add the water and mirin to the dry ingredients and mix well until smooth.

Add the egg and mix thoroughly.

Lightly oil the hot sandwich maker (oil not included in ingredient list).

Heat both sides of the sandwich maker separately, then pour the batter into each side until half full. Cook over low heat.

When bubbles start to form on the surface of the batter, add sweet red bean paste (anko) to one side.

If you have leftover batter, pour it over the anko. If not, use the still-soft part from the other side to cover the anko.

Close the sandwich maker, making sure the filling stays in place, and cook over low heat for 3 minutes on each side.
