Ingredients

  1. 1.1 lbslamb chops (about 500 grams)
  2. 1.1 lbsground lamb or beef (about 500 grams)
  3. Nuts of your choice (such as almonds or pine nuts)
  4. For marinating the lamb chops:
  5. Salt, seven spice blend, ground ginger, ground cardamom, ground red pepper
  6. For the rice:
  7. 2 cupsbasmati rice (about 400 grams)
  8. 4 cupshot water or meat/chicken broth (about 950 ml)
  9. 2small pieces mastic
  10. 1cinnamon stick
  11. 5cardamom pods
  12. 1dried black lime (loomi)
  13. 2 tablespoonsghee (about 30 grams)
  14. For the freekeh:
  15. 2 cupsfreekeh (about 400 grams)
  16. 4 cupshot water or meat/chicken broth (about 950 ml)
  17. 7 ozground lamb or beef, optional (about 200 grams)
  18. 2 tablespoonsghee or rendered lamb fat (about 30 grams)

Steps

  1. 1

    Marinate the lamb chops with the spices and let them sit for 15 minutes.

    Grill the chops in a skillet over medium heat.

    If the chops are thick, after grilling, place them in the oven for 10 minutes to cook through. For a smoky flavor, add a piece of charcoal to the skillet, cover, and let sit for 5 minutes so the meat absorbs the aroma.

    Sauté the ground meat and nuts, then set aside for serving.

    For the rice: Sauté the spices with 1 tablespoon of ghee to release their flavor.

    Add the rice and stir for 1 minute.

    Pour in the broth, bring to a boil, then cover and simmer on low heat until fully cooked. Stir in 1 tablespoon of ghee for extra flavor.

    For the freekeh: Sauté the ground meat with 1 tablespoon of ghee, then add the washed and well-drained freekeh. Stir until lightly toasted.

    Add the broth, bring to a boil, then cover and simmer on low heat until fully cooked.

    Stir in 1 tablespoon of ghee for a distinctive flavor.

    Spoon the freekeh onto a serving platter.

    Add the rice on top.

    Top with the sautéed ground meat.

    Finally, arrange the lamb chops and nuts on top.
