Mushrooms Jus

When you heard or see the word "Jus" you think of "au Jus". Well Mushroom Jus is a lot like it, except without the beef. Great for use on steaks, lamb, and other dark meat entrees.

When you heard or see the word "Jus" you think of "au Jus". Well Mushroom Jus is a lot like it, except without the beef. Great for use on steaks, lamb, and other dark meat entrees.

Take a sauce pot on high heat and add the olive oil

Add your mushrooms and garlic and brown them up for about 4 minutes (this is where youre getting the color from)

Next, deglaze the pot with the red wine. Reduce by 1/2.

Now add the water, thyme, and season with salt and pepper to taste.

Bring to a boil and simmer for 30 minutes. You want to get the thyme infused with the mushrooms well.

Taste and adjust seasoning if needed.

Strain the mushrooms and use on your meal! The jus may be strong so dont get too crazy when using it on your meal!
