Ingredients

  • 2 tspcumin seeds
  • 3red chilli peppers diced
  • 1/2 pintorange juice
  • 2 tbsplime juice
  • 1leek chopped
  • 2 tinschopped tomatoes
  • 2 tinschickpeas
  • to tasteSalt and pepper
  • 1 tspolive oil
  • Small bunch chopped coriander

Steps

  1. 1

    In a large saucepan heat olive oil. Add cumin seeds and chilli peppers and heat until seeds are toasted.

  2. 2

    Add orange juice and lime juice and bring to a quick boil. Just as it boils, reduce to a simmer.

  3. 3

    Add remaining ingredients and simmer for at least 30 minutes. Add salt and pepper to taste.

  4. 4

    Serves (preferably) over cous cous or rice. Add chopped coriander to garnish.

  5. 5

    For a non-vegetarian dish add browned cubes of chicken.
