Cut the pork belly into large pieces. Sear them in a skillet until browned on all sides.

Place the pork in a pressure cooker. Add the remaining ingredients on top, placing the scallion greens last. Lock the lid and cook under pressure for 30 minutes.

Once the pressure has released and the lid can be opened, transfer everything to a regular pot. Simmer over medium heat to reduce the sauce. If you want to add hard-boiled eggs, do so now. Occasionally shake the pot to prevent sticking.

When the sauce has reduced to about two-thirds and becomes glossy, it's done. For best flavor, let it cool completely, then reheat before serving.

For extra flavor, try adding 8 to 10 cloves of garlic, halved with skins on, in step 3. It will change the aroma significantly.
