Ingredients

  1. 200 gmspaneer
  2. 2 tbspoil
  3. 1bay leaf
  4. 1 cupchopped tomatoes
  5. 1 1/2 cupgrated bottle gourd (lauki)
  6. 1-2green chillies chopped
  7. 1 tspsalt or to taste
  8. 1 tbspbutter
  9. 1 tbspoil
  10. 1 tspKashmiri red chilli powder
  11. 1/4 tspturmeric powder (haldi)
  12. 2 tspcumin powder (jeera)
  13. 2 tspcoriander powder (dhania)
  14. 1/2 cupcream
  15. 1 tspdry fenugreek leaves (kasoori methi)
  16. 1 tbspcoriander leaves for garnish
  17. Coarsely ground garam masala
  18. 6cloves
  19. 10peppercorns
  20. 1 " piece of cinnamon
  21. 1black cardamom
  22. 5green cardamoms
  23. 1star anise
  24. 1 piecemace

Cooking Instructions

    To begin, grate the lauki and keep aside.

    Heat 1 tbsp oil in a pan. Add in a bay leaf

  3. 3

    Add in the chopped tomatoes, grated lauki, and green chillies. Saute for a few minutes.

    Add in the salt. This helps the tomatoes cook faster. Mix well. Cover with a lid and cook until the tomatoes and lauki are cooked and the liquid dries up.

    Remove to a bowl. Allow it to cool completely. Blend it into a smooth puree and keep aside.

    Heat 1 tbsp oil and butter in a pan.

    As the butter melts, add the coarsely ground garam masala.

    Add in the tomato and lauki puree. Mix well.

    Now add the dry masalas – Kashmiri red chilli powder, turmeric powder, cumin powder and coriander powder. Mix well and saute until you can see the oil appearing on the sides.

    Add in the cream. Mix well.

    Add the paneer cubes with the crushed kasoori methi. Mix until the paneer is well-coated. Cover it with a lid and simmer for a few minutes. Check the salt and add more if required.

    The No-Onion No-Garlic Paneer Butter Masala (Nut-Free) is ready to serve. Garnish it with chopped green coriander leaves and serve hot with lachcha paranthas or naan.
