Granita is a semi frozen Dessert made from Sugar, water and various flavourings. Originally from Sicily, this is available all over Italy in varying forms. It is related to Sorbet. The main difference being that Sorbet is smooth and creamy whereas Granita is basically shaven Ice. The Fruit puree is poured into a pan and frozen. Hence there is a great difference in their textures. Sorbet is smooth churned and allow to freeze in airtight containers.
Most Granitas are made with Fruit, liquid and Sugar. Whether it is made from Fruits, Juices or Wines, it is made almost in the same way. The ratio should be the same. Italian Ice is based on this creation Granita. One of the most popular frozen beverages, it is often referred to as Slush.

Granita contains small Ice crystals and one should be able to feel that with the tongue. It should be compact not liquid and soft like a Sorbet. Though it's a perfect after Dinner treat or a Dessert, it's enjoyed at basically anytime. In Summers, it is incredibly enjoyed at Breakfast but it can be acceptable at any time of the day as a snack or a meal as well. It's that much loved by all. In Italy,it is often eaten at Breakfast with Brioche Bread.

  • 1/2medium sized chopped Watermelon
    Watermelon Juice
  • 1/2 cupSugar
  • 2 tbspLemon juice

Steps

    Cut the Watermelon into small chunks discarding the rind and the seeds at first. Freeze them for an hour or two.
    Blitz this frozen chunks with sugar and lemon juice added.

    Pour this in an open container either a glass dish or a ceramic one and freeze until set for nearly about 2-3 hours.

    Keep breaking the ice crystals after every 30 minutes while it's freezing. It should be slushy and crunchy.

    After done, flake the top with a fork and then scoop out the stunning and lip-smacking Watermelon Granita. Enjoy!
