Ridge Gourd Thecha

Take Ridge Gourd/turai and Peel and remove the skin. Wash it well. Now remove the top and tail of the green chillies. Dry roast the peanuts then remove the skin and grind it coarsely. Peel the garlic pods.

Take a pan heat the oil on low flame. Add cumin, asafoetida sesame seeds and let it crackle. fry the chillies and garlic for a minute then add the ridge Gourd peel, roasted peanuts and grated dry coconut. Roast it stirring continuously for 1-2 minutes.

Now add salt as per taste and mix well.Turn off the flame. Remove in a plate and allow it to cool.

In a mixi jar add all these together or in a pestle and mash it together coarsely.
Remove in a bowl. - 5
Serve this spicy, healthy and crunchy thecha with chapati, paratha or rice.
