Ingredients

  1. 250 gramsgreen chilies (preferably medium-sized and less spicy)
  2. 2 tablespoonsmustard seeds
  3. 2 tablespoonsfennel seeds (saunf)
  4. 1 tablespoonfenugreek seeds (methi)
  5. 1 teaspoonturmeric powder (haldi)
  6. 1 tablespoonsalt (adjust to taste)
  7. 1 teaspoonasafoetida (hing)
  8. 1/2 cuplemon juice (or vinegar)
  9. 1/4 cupmustard oil (or any oil of your choice)

    Preparation of Chilies: Wash and thoroughly dry the green chilies. Cut them into 1-2 inch pieces. If you prefer less heat, you can remove some of the seeds.

    Roasting Spices: In a dry pan, lightly roast the mustard seeds, fennel seeds, and fenugreek seeds until they are aromatic. Let them cool down, then coarsely grind them in a mortar and pestle or spice grinder.

    Mixing Spices: In a large bowl, combine the ground spices with turmeric powder, salt, and asafoetida.

    Mixing with Chilies: Add the green chili pieces to the spice mixture and mix well to ensure the chilies are evenly coated with the spices.

    Adding Lemon Juice: Pour the lemon juice (or vinegar) over the spiced chilies and mix well. The acidity helps preserve the pickle and adds a tangy flavor.

    Heating the Oil: In a small pan, heat the mustard oil until it reaches its smoking point, then let it cool slightly. This step is crucial to remove the raw taste of the oil and enhance the pickle's flavor

    Mixing with Oil: Pour the warm (not hot) mustard oil over the chili mixture and mix well.
