Here is recipe of Amaranth Moong Vaaji. Firstly heat up a frying pan with refined oil any fry boris until it gets golden. Keep the fried boris aside and crushed it.

Now fry chopped coconut and badam for 2-3 minutes. Keep them aside too. Now add black cumin seeds and green chillies into the oil. After that fry moong daal along with green chillies and black cumin.

Now add red & yellow bell peppers. Fry it unless colour changes. Now add some salt and turmeric powder, sambar masala and chopped amaranth leaves. Mix it properly and cook it in low medium flame for 10 minutes. Add some sugar.Then spread the crushed boris along with fried coconut and badam.

Mix them gently and serve hot along with rice.
