I’m lucky to have a well-stocked Asian supermarket nearby. My family and I have been eating our way through their greens. 😁. One of my favorites is Taiwanese spinach. It has longer stems than standard spinach, and these stems are quite sweet. If you can’t get Taiwanese spinach where you live, try this recipe with regular spinach instead.

Sautéed Taiwanese Spinach

Ingredients

  1. 1 lbTaiwanese spinach
  2. 1 Tablespoonolive oil
  3. 2 clovesgarlic
  4. 1/4 teaspoonground ginger (or one small slice of fresh ginger finely diced)
  5. 1 TablespoonShaoxing (Chinese cooking wine)
  6. 1/2 teaspoonkosher salt
  7. 1/2 teaspoonsugar
  8. 1/2 teaspoonsesame oil

    Trim the ends of the spinach and cut the stalks in half. Wash the spinach really well.
    I put the spinach in a very large bowl, fill it with cold water, swish the stalks gently but thoroughly, and let them sit in the water for a few minutes to let the dirt and grit settle. Then I lift the stalks out, discard the dirty water, and repeat the process at least four more times.

    In a small bowl, combine the salt, sugar, and Shaoxing wine. I warm this mixture in the microwave for about 10 seconds to warm it up and dissolve the salt and sugar. Then, I mix in the sesame oil and set it aside until I need it.

    In a large skillet, add the olive oil, garlic, and ginger. Sauté this over low heat for approximately one minute, or until fragrant. Do not let the garlic brown.

    Add the spinach and use tongs to gently rotate and flip the spinach until it is well coated with the oil mixture.

    Cover the pan and allow the spinach to cook over low heat for approximately one minute.

    Add the Shaoxing wine mixture, and toss the spinach thoroughly. Allow to cook for a few minutes more until some of the liquid has simmered away to your liking.

    Taste the spinach and add additional seasoning as needed.
