Lemon, chickpea, green herb and coconut stew (vegan)

Fresh-tasting and hearty at the same time.

Adding the halved, zested and squeezed lemons to the stew as it cooks adds a great citrusy zing. If you have leftovers, remove the lemon halves before storing, othewise the flavour will become too intense.

Make sure you use high quality chickpeas, I like to soak mine when out of the can and remove the membranes before putting into stew.

Ingredients

4 servings
  • 2-3 tablespoonscoocnut or ground nut oil
  • small bunch (eg 5) spring onions, thinly sliced
  • 2 cloves of garlic, finely chopped
  • 25 g (small bunch) of coriander, stalks chopped and leaves picked off
  • 2 teaspoonsground turmeric
  • 3 canschickpeas, drained and rinsed (400g cans)
  • 200 mlhot vegetable stock (or water and high quality veggie bullion cube, like Khalo)
  • 1 can (400 ml)coconut milk
  • 2unwaxed lemons, zested and cut in half
  • 2shallots, peeled, halved and very thinly sliced
  • /// to serve
  • 1large handfull of green leave (c. 14 g) - coriander, basil, mint, or a mix
  • 1 pinchdried chilli flakes (optional)

Steps

  1. 1

    Put a large saucepan over medium heat. Add a little oil, the spring onions, gardlic and coriander stalks. Cook for about 5 minutes or until the spring oning is soft and sweet to taste.

    Add the turmeric an cook for a couple of minutes to toast and release the oils. Add the chickpeas, stock and coconut milk, then zest and juice of tboth lemons, and the squeezed lemon halves.

    Bring to a boil, and simmer over a medium-low heat for about 20 minutes, ntl slighlty thickened and a vivid yellow in colour.

  4. 4

    In a separate frying pan, heat 3 tablespoon of oil and fy the shallots over a medium-low heat, until godlen and sighly crisp. Remove from the frying pan and place on a plate covered by a paper towel to remove excess oil.

  5. 5

    Once the stes is ready, scoop out the lemon halves, stir through most of the hergs and serve topped with the crispy shallots, remaninig hermbs and chilli flakes (if using). Enjoy!
