This is an aromatic pulao with
sweetness of corn & earthy smell of fresh mehi. Corn methi pulao is a perfect feast for your senses & 1 more addition to your list of pulao. This is a mildly flavoured pulao , so children & senior citizens ( who eat less spicy ) can also enjoy it .
It's a 1 pot dish & very quick & easy to make . It's a perfect meal for a Sunday dinner .
Here I have tried to creat a slightly different recipe using garlic paste & also use butter & oil to make the rice more aromatic. Methi cooked in butter makes it more aromatic & the smell of buttered methi lingers for a long time.

Steps

Assemble all the ingredients. Wash throughly & soak the Basmati rice for 30 minutes.

Take butter & oil in a pressure cooker, add cloves, cinnamon & peppercorns. Add green chilli - ginger & garlic paste. Saute for 1/2 a minute.

Add onions. Saute for 2 minutes. Add methi & corn & saute for 1 more minute.

Add rice & 2 cups of hot water & pressure cook for 2 whistles.

Allow the steam to escape before opening the lid.

Serve methi corn pulao with fresh curds / raita / Gujarati Kadhi.
