Quick Flammekueche-Style Tortilla Flatbreads

Today I'm sharing my quick flammekueche-style tortilla flatbreads, which I love to make whenever I'm craving tarte flambée but want something fast and easy. These little flatbreads come together quickly and easily. Sometimes I add a little extra with a sprinkle of shredded cheese... A little magic touch, and voilà, a delicious treat! For the purists: as someone from Alsace, I don't claim these flatbreads replace a real tarte flambée, but they definitely satisfy our taste buds for a simple, no-fuss dinner, especially with a green salad (for the vitamins... and to feel a bit better about it! lol...). You can also serve them as an appetizer, cut into quarters.

Preheat the oven to 400°F (200°C) on convection or broil setting.

Place the tortillas on two baking sheets lined with parchment paper.

In a small bowl, mix 6 tablespoons of yogurt or quark with 2 tablespoons of sour cream, salt, and a little black pepper.

Spread the yogurt mixture evenly over each tortilla using the back of a tablespoon, leaving about a 1/4-inch (6 mm) border.

Top each tortilla with a few thin onion slices, some bacon bits, and (optional) a little shredded Swiss cheese or a couple of thin slices of Munster cheese per flatbread.

Bake both trays on two oven racks for about 10 minutes (or until the tops are lightly golden and bubbly, depending on your oven). Watch closely to prevent the edges from getting too dark.

Serve these quick flammekueche-style flatbreads hot, either for a simple dinner with green salad or as an appetizer, cut into quarters.
