Beef and Egg Barquitas

Sauté the chopped onion in olive oil for a few moments, then add the ground beef. Season with salt and pepper. Next, add the tomato purée and cook uncovered until the tomato juice reduces slightly.

In a bowl, beat the eggs with the chopped chives and parsley, and grated ginger. Season with salt and pepper. Add to the ground beef mixture and cook again until the eggs set. Meanwhile, pre-cook the barquitas according to the package instructions. (Here, 9 minutes at 293°F).

Once the barquitas are pre-cooked, fill them with the beef and egg mixture using a tablespoon. Sprinkle with shredded Gruyère cheese and bake for a few minutes until the cheese is crispy. Serve with a crunchy salad and your meal is ready. Enjoy 😋.
