Ingredients

Serves 2 servings
  1. 1.1 lbscarrots (500 g)
  2. 1 1/2 cupsall-purpose flour (180 g)
  3. Salt, to taste
  4. 3 tablespoonsbutter (40 g)
  5. 2 slicesham
  6. 1garlic clove
  7. Fresh mint leaves, to taste

    Use a juicer to extract 1 cup (250 ml) of juice from the carrots.

  2. 2

    Pour the carrot juice and a pinch of salt into a saucepan and bring to a boil.

  3. 3

    Add the flour all at once and stir to form a dough similar to choux pastry.

  4. 4

    Continue kneading the dough on a floured surface until smooth, then let it rest.

  5. 5

    Shape the dough into gnocchi and cook them.

    Toss the gnocchi with butter that has been melted and flavored with the garlic clove over heat.

  7. 7

    Finish the dish with fresh mint leaves and ham that has been crisped in the oven.
