You can switch up the sauce by using árbol and guajillo chiles instead of chipotle. If you have any sauce left over, you can make some delicious chilaquiles with it.

To make the flautas, roll the sausage or shredded chicken with the cheese inside the tortillas. If you like, you can place 4 flautas on a skewer.

Fry in oil until golden and crispy.

For the sauce, boil the tomatoes, onion, and garlic.

Blend the tomatoes, onion, garlic, chipotle chiles, and chicken bouillon seasoning with a little of the water used to boil the vegetables.

Place the desired number of flautas on a plate and pour the sauce over them to taste. If the flautas are still hot, sprinkle with shredded cheese so it melts. Add your favorite veggies, a little sour cream, and grated dry cheese on top.
