Take a pan, add 2 tsp oil and fry the mushroom pieces in it. Now add some salt and turmeric powder & fry them for some time. Remove it from the pan and keep them aside.

Heat a pan, add 3 tbsp of mustard oil. When the oil gets hot add all the khada masalas mentioned above in the ingredients section. When they starts spluttering add chopped tomatoes in it and fry them for about 3 minutes until it becomes little mushy.

Then add grated onion to it and mix it well with the tomatoes. Then add ginger-garlic paste and combine everything well as shown below.

Now add all the dry masalas mentioned above in the ingredients section like coriander powder, cumin powder, garam masala, turmeric, kashmiri red chilli powder, salt and sugar. Mix everything well with the masala. Keep the flame low and fry the masala until oil starts releasing.

Now add fried mushrooms to it and fry them all for 2 to 3 mins more. Add 1 cup of water, add salt if needed and cover it and cook it for 5 to 7 mins on a low flame.

After 7 minutes open the lid and add paneer cubes in it. Combine the paneer well with the masala. Let it cook for about 5 minutes more. Then sprinkle some chopped coriander and serve it hot with parathas or roti.
