Zucchini and Chickpea Patties with a Gooey Center

A simple and tasty recipe, these chickpea patties are egg-free and made with just 4 ingredients: chickpeas, zucchini, salt, and Parmesan cheese. To make them more delightful, I added a bit of provolone cheese in the center of the patties.

A simple and tasty recipe, these chickpea patties are egg-free and made with just 4 ingredients: chickpeas, zucchini, salt, and Parmesan cheese. To make them more delightful, I added a bit of provolone cheese in the center of the patties.
Cooking Instructions

Place the drained and rinsed chickpeas in a bowl and blend them with an immersion blender.

Wash the zucchini, trim the ends, and grate them using a coarse grater. Place the grated zucchini in a colander and squeeze them well with your hands. Add the zucchini to the chickpea puree, mix in the Parmesan cheese and salt, and knead the mixture well.

In a separate container, prepare the breadcrumbs. With your hands, form the chickpea and zucchini patties, add a cube of provolone cheese in the center for a gooey effect, and roll them in the breadcrumbs. As you prepare them, place them on a baking sheet lined with parchment paper. Drizzle them with extra virgin olive oil and cook the chickpea and zucchini patties in an air fryer or convection oven at 400°F for about 15 minutes.

You can substitute the zucchini with spinach or mashed boiled potatoes. Feel free to add spices like oregano, thyme, or black pepper. You can also add herbs like basil or parsley to the mixture. You can fry the chickpea patties in a pan, but add 2 tablespoons of breadcrumbs to the mixture. And voilà, given the heat, I let them cool down. They're delicious anyway.

The longer you let the shredded squash drain, the more bite to the patty. These are a great vehicle for anything you want to put on top or straight out of the skillet.
