Peel the eggplant, slice it, sprinkle with salt, and let it sit for 30 minutes. Slice the peppers.

Fry the eggplant and peppers in oil. Dice the onion and sauté in 2 tablespoons of oil. Add the garlic and tomato juice, and let it simmer for a bit.

Add a little salt, vinegar, sugar, and cumin. Spread 2 tablespoons of sauce in a baking dish, layer with eggplant, sprinkle with 2 tablespoons of sauce, add the ground beef, and top with another layer of eggplant, peppers, and tomato sauce.
