Steps

Cut the vegetables into large pieces (recommended to keep them big so they don't get mushy while simmering):
- Onion
- Carrot
- Potatoes (cut these larger than the others, as they soften quickly) - 2
Cut the pork into cubes (you can use other meats if you prefer)

Heat a pan over medium-low heat.
- Add the butter and let it melt.
- Add the onion and sauté until it starts to turn translucent. - 4
Add the pork and cook, stirring constantly, until it starts to brown (keep stirring to prevent burning, especially when using butter).

Add the remaining vegetables and sauté until they start to get some color.

Add enough broth or water to just cover the vegetables.
- Simmer for 20 minutes, or until the vegetables are tender (add more water if it gets too dry).
- Skim off any foam that forms on the surface. - 7
Add the curry roux blocks and stir until completely dissolved and blended.

Add the chocolate to deepen the color and flavor.
- Simmer for another 10 minutes, then turn off the heat and serve.
