Cooking Instructions

Seal pork chops in a very hot pan over all 6 sides. No need to oil it first.

Add water to cover 2/3 of the chops and let it boil. Add 1/2 cup of cognac if desired.

Add a pinch of salt over every peace and 5 to 6 garlic cloves. Cover and let simmer on low heat.

Remove chops when tender, about 30 minutes into simmer. Save the juice, let cool.

You can do all this the day before.

20 minutes before serving, cover in bbq sauce and warm it in a pan at medium heat.

You can use the meat juice as gravy, after removing the fat. Add 2 tsp corn starch to thicken it and salt to taste.
