Ingredients

  • 4 ckale, finely chopped
  • 2large lemons
  • 4 cripe mango, julienned
  • 1/2 colive oil
  • 2 tbsplemon jest
  • 1 tspcumin powder
  • Dressing:
  • 1 tspgarlic minced
  • 1 tbsphoney
  • 1/2 cfreshly squeezed lemon juice
  • 1/2 colive oil
  • 1 croasted walnuts

    Prepare a checklist. keep all ingrdients within reach

    Wash the kale thoroughly. Remove the the veins. Chop the leaves, Place them in a bowl. Add 1/2c lemon juice and olive oil. Using your fingers macerate the leaves

    Peel, and seed the mangoes. Cut the mango into small pieces. Add the mango pieces to the bowl. Add lemon zest and cumin. Mix together with your fingers

    Dressing

    In a bowl take lemon juice, honey, minced garlic and olive oil. Whisk. Add this to the bowl containing kale. Refrigerate.

    In a microwave safe plate dry roast the walnuts for a minute in a microwave oven. Garnish with dry roasted walnuts just before serving
