“Heat a Kadhai and add oil along with mustard seeds. Once they start to crackle, add fenugreek seeds and a pinch of asafoetida. Stir for about 30 seconds, then add curry leaves and chopped onions. Sauté until the onions turn golden brown.”

Then add chopped pumpkin and chopped bottalguard,chopped tomatoes and sauté it for one minute.

“Add all the spices and salt, and cook for one minute. Then, add boiled toor dal and mix well. Pour in 2 cups of water and stir, followed by tamarind paste and jaggery. Mix everything thoroughly.”

Add salt, cover it.and cook for 5 minutes add grated Copra and coriander and ready your pumpkin curry add ghee,serve it with rice or chapati,garnish with coriander.
