Enjoy the last sun-ripened vegetables this September with my quick and refreshing take on tabbouleh!

Boil 1 2/3 cups water (about 400 ml). In a large bowl, pour in the couscous and add the boiling water. Stir and set aside.

Wash the tomatoes, cucumber, and bell pepper. Peel the cucumber. Dice the cucumber, tomatoes, and bell pepper into small pieces.

Peel the onion or shallots. Slice them thinly. Wash and finely chop the mint.

Fluff the cooled couscous with a fork to separate the grains. Add the olive oil and mix well.

Add the diced tomatoes, cucumber, bell pepper, sliced onion or shallots, raisins, and chopped mint to the couscous.

Juice the lemon and add the juice to the couscous. Season with salt and pepper. Mix well and chill for 1 hour before serving.
