Bagels are traditionally made from yeasted dough that is shaped by hand into a ring, briefly boiled in water and then baked. Here I present my innovative take on this famous variety of bread. As known to everyone, the time taken by the dough with Yeast to double up in volume is what actually matters for the whole recipe to come out good. The baking time and the preparation time is low but the proofing time requires patience.
The wait is all worth it and you end up with some freshly baked homemade Bagels that are essentially chewy, dense yet soft and supple. You will love it for sure and Barley flour has added an element of perfect suppleness and texture.
These homemade Bagels were served with some fresh Cream Cheese with lots of shade dried Italian Herbs. This Cream Cheese is loaded with an irresistible aroma of some of the most loved Herbs. My family loves it this way. The toppings and the serving suggestions are too many. Be it any of your favourite one, they are absolutely awesome.

In a large mixing bowl, combine together water, sugar and yeast. Stir it. Let stand until the mixture is very foamy, about 10 minutes in all.

To the yeast mix, add both the flours and salt. Prepare a nice dough by mixing all until it comes all together. If needed add a tablespoon of flour. Cover it and let it double up in size for nearly two hours in a dark place.

Line the baking tray with a parchment paper and slightly grease it as well. Keep it handy. Punch the dough and bring it onto a clean work surface. Divide the dough into 8 or 9 equal sized balls. For the smaller bagels, divide into 12.

Lightly oil your hands. Gently flatten each ball. Shape each of it into a round ball by cupping it with both hands. Now press your finger into the centre thus making a hole in it just like that of a donut. Make all in the similar fashion.

Place them on the baking tray leaving some space in between each. Cover and leave it to rest for 20 minutes. Meanwhile preheat the oven on 200°. Heat water in a pan and bring it to a boil with baking soda and sugar. Add bagels few at a time and do it in batches. Boil for about 2-3 minutes in all on both the sides by turning and tossing.

Remove each with a slotted spoon letting the water drain off well. Place all of them back on the baking tray. Sprinkle white or black sesame seeds. Bake on 200° in a preheated oven for 15 minutes. Flip over and continue baking for about 5 to 10 minutes or until they turn golden brown.

Cool on a wire rack for 10 minutes before serving. Cut them open and spread some freshly whipped cream cheese, fresh cream, jam etc. Enjoy!
