Cut the bok choy into bite-sized pieces, separating the stems and leaves. Cut the pork into small pieces and rub in the marinade. Mix the seasonings together.

Microwave the noodles in the package for 1 minute. Heat vegetable oil in a frying pan and add the noodles in a block. Do not break them apart; fry until both sides are crispy and browned.

Pour 2 to 3 tablespoons of water around the edge of the pan (it will splatter), quickly cover with a lid, and steam for about 20 seconds. Then, break apart the noodles while evaporating the moisture and transfer to a plate.

Add sesame oil to the pan, then stir-fry the pork, bok choy stems, bean sprouts, and bok choy leaves in that order, starting with the ingredients that take longer to cook (keep the vegetables crisp).

Add the seasonings and bring to a boil while stirring until thickened. Pour over the noodles and it's ready! (Add extra vinegar if you like.)
