To begin, peel the sweet potatoes and dice them into 1” pieces.

Heat oil for deep frying. Fry the sweet potatoes in batches until cooked and light golden brown in color. Remove to a kitchen towel to drain.

To prepare the sugar glaze, heat brown sugar, honey, and 2 tbsp oil on medium heat until the sugar melts and starts to bubble.

Reduce the heat to a low. Add in the fried sweet potatoes and mix until they are well coated.

Add in the sesame seeds and mix.

Remove to a parchment-lined dish and separate the pieces so they do not stick together.

Allow to cool until the caramel coating hardens a bit. Goguma Mattang or Korean Candied Sweet Potatoes are ready to enjoy.
