Wash all vegetables and cut them into your preferred size to prepare.

Add about 1/3 of a pot of water and a little oil to a pot. Bring to a boil, then add the carrots and shimeji mushrooms. Cover and simmer for about 2 1/2 to 3 minutes.

Add the corn chowder soup mix and stir well. Then add the dumplings and tofu sheets. Cover and simmer for another 2 1/2 to 3 minutes.

Add the baby bok choy, cover, and simmer for 1 1/2 to 2 minutes until cooked through. Serve hot.
