Serve this porridge with braised vegetables, scallion-seasoned tofu, pickled eggplant, vegan pickled vegetables, or roasted peanuts with garlic and chili.

Add the rice and water to a pot and bring to a boil. Reduce the heat and simmer for 30 minutes. Turn off the heat.

When ready to eat, add the cooked beans and bring the porridge back to a boil.

Serve the porridge with coconut milk, fried tofu, vegan pickled vegetables, or, for a savory option, shredded pork floss, pickled vegetables, braised fish, or braised pork with pepper.
