Aloo matar is a classic Indian curry made with potatoes and green peas. Using basic Indian spices like cumin, coriander, turmeric, this was a staple that I grew up eating. It’s vegan and best enjoyed with rotis or hot puris and is easy enough to make for a weeknight meal! I made it instantly in pressure cooker.

It’s vegan and best enjoyed with rotis or hot puris and is easy enough to make for a weeknight meal! I made it instantly in pressure cooker.

Chop potatoes in medium cubes in water and keep aside.

Heat oil in a pressure cooker. Add cumin seeds and bay leaf, let cumin splutter. Add asafoetida and chopped onion. Saute it until onion becomes golden brown.

Then add grated ginger,tomatoes along with all the spices mentioned above. Cook for 5 minutes.

Now add chopped potatoes and green peas. Mix everything well.

Add 1/2 cup of water and pressure cook for 2 whistles. Let the pressure release itself.

At last add coriander leaves and some dry kasuri methi.

Serve it hot with roti or puri.
