Nihari Masala - in a pan add all spices and roast for 2-3 mins on low flame, add to blender and blender coarsely, set aside

Add red chilli powder, turmeric powder, Kashmiri red chilli powder and salt, mix well

In a pressure cooker heat ghee, add mutton pieces and on medium flame for 3-4 mins, stir to get brown colour, add ginger garlic paste and stir for 2 mins, add heap Tbsp of Nihari masala and stir well.

In a bowl add wheat flour and hot water and mix well, set aside. Make barista with sliced onions and set aside 1/2.

Add 8-10 cups hot water and pressure cook for 40 mins on medium flame or until mutton falls off the bone.

Add whole onion, half barista and cook on low flame for 15 mins or until you have the desired consistency

Extract the fat from the Nihari and set aside and add the Tarri, add then add the fat part.

Nalli Nihari is ready to serve with garnish of ginger juliennes, sliced green chiliies, lime wedge, coriander leaves
