First clean the saag nice, then wash them properly and finely chopped it and keep aside.

Heat mustard oil in a kadai add brinjal pieces with little salt and turmeric powder and fry them on medium heat until golden brown. Keep aside.

Same kadai add nigella seeds, saute few seconds then add chopped garlic, green chilies, ginger and fry them lightly then add chopped onion,salt, turmeric powder mix it and fry well.

Now add chopped methi, mix it and stir and fry 3-4 minutes. Now methi will released little water, then stir continuously on high heat to let the water evaporate. Then add fried brinjal pieces, mix it properly. Methi begun is ready.

Bengali Style Methi Begun recipe is ready to serve.
