Nippattu are crispy rice crackers from Karnataka - South India cuisine. These are eaten as a snack with coffee.
Steps

Mix rice flour, maida, and rava in a bowl. Grind coarsely ground nuts and roasted gram. Add in the bowl.

Add all dry masala - salt, red chilli powder, hing, jeera, sesame seeds, and curry leaves. Mix well. Now pour hot oil in the bowl. Mix it with a spoon.

Combine all together. Add gradually water to knead a dough. Cover it for 10 minutes.

Heat a frying pan, add oil. Take a plastic sheet, apply oil, and put a big portion of dough. Cover it with a plastic sheet. Roll it, and make a big round shape.

Cut it with any cookies cutter to give a perfect round shape. Don't roll it very thin. On a medium flame of gas, fry it till turns golden brown and crispy.

Make all Nippattu in the same way. Enjoy it with hot tea or coffee. You can store it in an airtight container for many days.
