2red bell peppers
7 oz (200 g)desalted cod
1garlic clove
to taste pitted olives
to taste extra virgin olive oil

Roast the 2 red bell peppers.

Chop the garlic and pit the olives.

Prepare the cod.

Mix all the ingredients together and let sit for a few minutes before serving.

Tip: You can use leftover esgarraet to make red pepper and cod croquettes.
