Ingredients

hr 35 mins (marination time is not included)
4 servings
  • 🌻Chicken Marinate:
  • 1 kgWhole chicken (with or without skin choice)
  • 1& 1/2 litre water enough to dip chicken)
  • 2 Tbspwhite Vinegar
  • 2 tspSalt
  • 1 tspPaprika powder
  • 1 TbspCoriander powder
  • Salt to taste
  • 1/2 TbspCumin powder
  • 1/2 tspTurmeric powder
  • 1/2 TbspRed chilli powder
  • 1/2 tspred chilli flakes
  • 1 TbspCornflour
  • 1/4 tspred food colour
  • 1& 1/2 Tbsp Ginger Garlic paste
  • 3-4 TbspLemon juice
  • 1 TbspCooking oil Some extra Oil for spray
  • 🌻OTHERS:
  • 1/4 tspRed chilli flakes for sprinkle (optional)
  • Lemon juice for pouring top of the Chargha
  • 1 SprigFresh rosemary or fresh coriander chopped for garnish

Steps

hr 35 mins (marination time is not included)
  1. 1

    Make deep cuts on whole chicken & set aside.

    In a bowl,add water,vinegar,salt & mix well.
    Add whole chicken,cover &marinate for 30 minutes then strain,pat dry & set aside.

    In a bowl,add all marinated ingredients with lemon juice & mix well.
    Add cooking oil & mix well.Add whole chicken & apply marinade evenly & massage chicken well,tie chicken legs with kitchen thread,cover & marinate for 30 mins and set aside. if you have enough time so keep in fridge at least 2-4 hours or overnight.

    In a wok,add water & bring it to boil.
    Place steamer & add marinated chicken,cover & steam cook on low flame for 30-35 minutes.

    Take out chicken from steamer,spray oil,place it in air fryer basket & air fry at 180°C for 15-18 minutes.
    You can also deey fry chargha after steam cooking.
    Sprinkle red chilli flakes,add lemon juice & fresh coriander & serve with steamed veg, roast potato or mashed potato. 🍴
