Bateta Poha recipe as a breakfast is popular in many states of India and every region has its own version of making it. E.g. In Maharastra, they add onion and make kanda poha. Some add boiled green peas to their poha recipe. In the Southern part of India, they make poha upma.
The version I am sharing here is the Gujarati style of batata poha recipe (aka bataka pauwa). 😋😊

Steps

Wash and soak the poha for 5-7 minutes,then discard the water.
Chop all the veggies and keep other ingredients ready. - 2
Add oil in a pan.
Add mustard, cumin seeds along with asafoetida,urad daal, cloves and Curry leaves.let them splutter well.
Now add chilli,garlic onion and cashew.saute well.
Add chopped potatoes, carrots,sweet corn and water,
Add salt and turmeric powder.
Mix well and let the veggies cook for 2-3 minutes on high flame.
Cover the pan. - 3
When water is reduced,add poha,fresh coriander, Tomato and lemon juice.
Mix well and cook for another 2 minutes,then switch off the flame.
Bateta Poha is ready. - 4
Serving Time..
Transfer the Bateta Poha in a serving dish.
Sprinkle more coriander leaves.
Serve immediately with hot Masala tea.
Enjoy your breakfast or Brunch.
