Sprouted Black Mung Bean Poha

Most people use green mung beans, but I had black mung beans at home, so I made this quick and delicious poha using sprouted black mung beans. These black mung beans are packed with protein and are especially popular in South Gujarat. They are also very healthy. Since I had these beans, I thought of sprouting them and making poha. They may look like black urad beans, but they are actually black mung beans.

Ingredients

15 minutes
Serves 4 servings
  • 1 cupsprouted black mung beans (about 150 grams)
  • 2 tablespoonsboiled potatoes, diced
  • 2 tablespoonspeanuts
  • 1 tablespoonfinely chopped ginger and green chili
  • 2 tablespoonsoil
  • 1 tablespoonchopped tomato
  • 1 teaspoonmustard seeds
  • 1 teaspooncumin seeds
  • 8-10curry leaves
  • 1 bowlpoha (flattened rice, about 1 1/2 cups or 100 grams)
  • 1 teaspoonturmeric powder
  • 1 teaspoonred chili powder
  • 1 tablespoonlemon juice
  • 1 tablespoonsalt
  • 2 tablespoonswater
  • 2 tablespoonschopped cilantro

Steps

    Rinse the black mung beans well and soak them overnight. In the morning, drain the water, wrap the beans in a cloth, and let them sit for 2 days to sprout.

    To make the poha, heat oil in a pan. Add the peanuts and fry them, then remove and set aside.

    Rinse the poha and soak it in water for a few minutes, then drain.

    After removing the peanuts, add mustard seeds to the same oil. When they start to pop, add cumin seeds, then add the sprouted mung beans and diced potatoes. Sprinkle a little water and cook for a few minutes. Add the chopped ginger, green chili, and curry leaves.

    Add turmeric powder, red chili powder, and salt. Mix in the spices. Add the rinsed poha and mix everything well. Finally, add lemon juice and chopped cilantro. Add some of the fried peanuts, saving the rest for garnish.

    Serve the hot sprouted black mung bean poha garnished with the remaining fried peanuts. Enjoy with tea.
