  • 4Roma tomatoes
  • 1onion
  • 3 clovesgarlic
  • 4 1/4 cupschicken broth (1 liter)
  • 1 teaspoonchipotle chili sauce (spicy)
  • salt and oil
  • 👉For serving:
  • 5 1/3 ozfresh cheese or cottage cheese (150 grams)
  • 4corn tortillas
  • 1avocado

    Roast the tomatoes, garlic, and onion. This time, it was done in an air fryer. Cut them into pieces, preheat the fryer, and cook at 392°F (200°C) for about 20 minutes.

    While that's cooking, cut the tortillas into triangles to make the tortilla chips. Fry them to accompany the soup, and once fried, let them cool on paper towels.

    Once the vegetables are roasted, blend them with a little broth. Pour it into a pot, add the rest of the broth, and add the spicy chipotle chili sauce. Adjust the spiciness to your taste or preference. Let it simmer for about 15 minutes, covered, over medium heat. Taste to see if it needs more salt or spice.

    Assemble your dish: Place tortilla chips at the base of the plate, pour the soup, top with sliced avocado, cheese, and more tortilla chips.
