Lemon Crêpes

The first time I tried crepes was in Italy, and like many first-timers, I was advised to order the classic Nutella version. In a blender, blend milk, eggs, butter, sugar, vanilla, salt, flour, and lemon zest and juice until smooth. Chill batter for atleast 30 minutes

Heat a nonstick skillet over medium-low heat and lightly coat it with cooking spray or melted butter. Pour 1/4 cup batter into the pan and swirl pan immediately from side to side to form an even circle. Cook both sides until lightly browned. Remove from heat and stack on a plate in the microve

Serve by spreading lemon curd (and/or whipped cream) down the center before folding the crepes into triangles

Sprinkle with powdered sugar and enjoy!
