Peel and cut the potatoes into pieces, then boil them in water.

Meanwhile, trim and wash the zucchini, then use a mandoline to cut it into thin strips.

Add the egg and grated Parmesan cheese to the zucchini.

Once the potatoes are cooked, let them cool for about 15 minutes, then mash them with a potato masher and add them to the zucchini, egg, and cheese mixture.

Gradually add the breadcrumbs, as the amount needed may vary depending on the moisture of your ingredients. Taste and season with salt and pepper to your liking.

Line a baking sheet with parchment paper. Use a spoon and your hands to shape the mixture into small patties and place them on the parchment paper.

Drizzle a little olive oil over each patty and bake on the top rack of a preheated oven at 400°F (200°C) for 10 minutes on each side (baking time may vary depending on your oven's power).
