Ingredients

8 servings
  • 1 1/2 cupsoatmeal (about 150 grams)
  • 2eggs
  • 1/2 cupsugar (brown or white, about 100 grams)
  • 1/2 cupmilk (or plant-based beverage, about 120 ml)
  • 1/4 cupvegetable oil (about 50 grams)
  • 1 packetbaking powder
  • 2medium apples

Steps

    Peel the apples, core them, and slice them thinly.

  2. 2

    In a bowl, beat the eggs with the sugar until you get a frothy mixture. Add the milk and oil, mixing well.

  3. 3

    In another bowl, mix the oatmeal with the baking powder. Add the dry ingredients to the wet ingredients, stirring until you get a smooth batter.

    Add the sliced apples to the batter and mix gently.

  5. 5

    Pour the batter into a cake pan (about 9 inches in diameter) lined with parchment paper. Arrange the remaining apple slices on the surface of the cake, if desired, sprinkle with cinnamon, and add raisins or chocolate chips.

    Bake in a preheated oven at 350°F (180°C) for about 35-40 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.
    Let the cake cool before serving.
