Ingredients

  • 2 cupsall-purpose flour
  • 1 teaspooncarom seeds
  • 1 teaspoonsalt
  • 4 tablespoonshot ghee
  • 2 cupswater
  • 2 cupsgreen peas
  • 2boiled potatoes
  • 1 tablespoonwhole coriander seeds (for spice mix)
  • 1 tablespooncumin seeds
  • 1 tablespoonfennel seeds
  • 1 tablespoonblack pepper
  • 1 tablespoonred chili powder
  • 1/2 tablespoonturmeric powder
  • 1 tablespoondried mango powder
  • 1 tablespoonsalt
  • 2 tablespoonscilantro
  • 1 tablespoongreen chili
  • 1 tablespoonginger
  • 2 tablespoonsoil

    To make the samosa dough, first, put the all-purpose flour in a bowl. Add carom seeds, salt, and hot ghee, and mix everything well. Adding hot ghee makes the samosas very crispy and soft. Gradually add water and knead into a medium-soft dough. Let it rest for 10-15 minutes.

    To make the filling, first prepare a spice mix by crushing the whole coriander seeds, cumin seeds, fennel seeds, and black pepper coarsely.

    Heat oil in a pan, sauté ginger and green chili, then add the prepared spice mix and sauté for a better aroma.

    Add boiled potatoes, mash them, and mix with red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, salt, and dried mango powder. Mix everything well.

    Add boiled green peas and mix everything thoroughly. Finally, add cilantro and let it cool.

    Knead the dough again, make small balls, and roll them into circles. Cut in half, apply water on the edges, shape into a triangle, and stuff with the pea mixture. Fold to make samosas. Repeat for all samosas.

    Heat oil well, then lower the heat and fry the samosas until they are crispy and brown. Enjoy these samosas with date-tamarind chutney, red chili and garlic chutney, and cilantro chutney with your family and celebrate the Holi festival.
