In a pan with half of the olive oil, sauté the onion and green onions.

Next, add the washed and drained rice and stir to sauté it as well. Add the water and let the rice soften a bit, cooking for ten minutes.

After ten minutes, remove from heat, and once the filling cools a bit, add the dill, parsley, mint, zest, salt, and pepper.

Meanwhile, rinse the grape leaves from the jar and soak them in warm water for ten minutes. Drain them, and once the filling has cooled, start wrapping them.

Line a pot with some grape leaves, add lemon slices, and start arranging the dolmadakia in a circular pattern. Make as many layers as needed. Add a little more salt, lemon juice, the remaining olive oil, and warm water until the dolmadakia are covered. Cover them with a plate and simmer for 40-45 minutes on low heat.

Serve with yogurt.
