Ingredients

  1. For the Dough:
  2. 500 gAll-purpose Flour
  3. 5 gSalt
  4. 5 gActive Dry Yeast
  5. 260-270 mlWarm Water (around 110°F / 44ºC)
  6. For the Filling:
  7. 1 lbsGround Grass-fed Beef
  8. 1Organic Grass-fed Egg
  9. 1small Onion, roughly chopped
  10. 1 BunchScallions, roughly chopped
  11. 1 tspSalt
  12. 1 tspBlack Pepper
  13. 2 tbspSoy Sauce
  14. 1 tbspDark Soy Sauce
  15. 1 tbspOyster Sauce
  16. 1 tspChinese Five-spice Powder
  17. 3 tbspSesame Oil
  18. For the Flour and Water Mixture:
  19. 15 gAll-purpose Flour
  20. 250 mlWater
  21. For Garnish:
  22. Black Sesame Seeds
  23. Chopped Scallions

Cooking Instructions

    Make the Dough:

    In a bowl, mix the flour, salt, yeast, and warm water.
    Knead into a smooth dough, then cover it and let it rise until it doubles in size (about 1 hour).

    Prepare the Filling:

    In a food processor, combine ground beef, onion, scallions, salt, pepper, five-spice powder, soy sauces, oyster sauce, and sesame oil.
    Blend until well mixed and set aside.

    Shape the Dough:

    After the dough has risen, punch it down to release air bubbles. Roll it out into a log and cut it into 21 pieces (around 35 g each).

    Roll each piece into a thick wrapper, leaving a slight bump in the middle.

    Fill and Seal:

    Add a spoonful of the filling to the center of each wrapper. Pinch the edges together to seal, forming the bao zi.

    Rest the Bao Zi

    Let the filled bao zi rest for about 15 minutes before cooking.

    Fry the Bao Zi:

    Heat some oil in a cast-iron pan over medium heat. Place the bao zi in the pan, flat side down, and fry for 2-3 minutes until golden brown on the bottom.

    Simmer:

    Pour the flour and water mixture around the bao zi (not directly on top), cover the pan with a lid, and let it simmer for about 15 minutes until the liquid is absorbed.

    Crisp the Bottom:

    Drizzle a bit more oil around the bao zi and cook until the bottom is thick and golden brown.

    Garnish and Serve:

    Sprinkle black sesame seeds and chopped scallions over the fried bao zi before serving. Enjoy!
