Heat your oven to 180°C

Cream the butter and sugar together untill a light golden colour before adding in the eggs one at a time.

Once the eggs are starting to mix in to the butter and sugar add in the flour and ground cinnamon.

Tip the mixture into a cake tin and bake for 15 minutes.

Meanwhile, peel and chopp the apples before cooking them in the microwave for 1 and a half minutes

Remove from the microwave and, using the back of a fork, break the apples down a little before mixing in a teaspoon of cinnamon.

Once cooled, slice the cake horizontally and add the apple to the middle of the cake.

Thicken double cream and spread on top of the apple.
