In a large pot, turn heat to medium and brown your turkey and onion with the oil and S&P. Once cooked through, add the broth and 2 cups of milk and bring to a boil.

Add the pasta and cook one minute under the package directions. Stir often and halfway through the cooking process add spinach and tomatoes and cover to wilt them with the steam. You will work quickly to add the cheeses on next to start to melt without mixing in. Cover again and let it melt everything. Once the five minutes are up removed from the heat, add in your Greek yogurt and stir everything.

You can add more milk or Greek yogurt at this point to get desired texture. Add cheddar cheese powder to taste.
